Convivendo a girl with celiac disease at the moment, we need to eat gluten free so we invent a bit of everything! This
is a pie with vegetables and ricotta Maltese. The ingredients (like what I've always in the fridge):

onion - 1 / 2 large eggplant
- 1 zucchini
- 1 carrot
- a piece of pumpkin

2 eggs - about 300 gr ricotta Maltese
Wash and cut the vegetables into small cubes and cook in a frying pan. Meanwhile, beat eggs and add the ricotta. Once cooked vegetables, add to the mixture.
Coat a baking sheet with parchment paper and place the mixture.
Cook for around 30 minutes, or until it has created a beautiful golden crust.
